For gravies and biryanis, here are two quick tips: It's better to add them at the beginning so that the onions will melt by the time the gravy cooks. For biryani, it is recommended to add extra oil or ghee because freshly fried onions have a lot of oil trapped in them, whereas these onions are practically oilless.
